Regarding egg, nut and dairy free cakes, try a Boiled Fruit Cake. I've had success using dairy free margarine, and egg replacer in these. The result is a little crumbly when warm, and not quite as moist and solid as some other recipes, but it always disappears almost the moment it comes out of the oven! There are many other recipes on line if you want variations.
